No-Guilt, Good-For-you Ice Cream

It's August, we're supposed to be having great weather. 
The kids are off and on the constant hunt for treats. 
Bake Off is BACK and our screens will be filled with carb-heavy deliciousness!

Well, there's so many reasons to give in temptation at the moment, so how about I give you a guilt-free alternative? 

Ta Da! I present my special "Ice Cream" recipe. 

It's dead easy to make, contains no added sugar, only has three ingredients and no artificial preservatives. 

Ditch the e-numbers and the expensive Ben and Jerry's. Try this instead:


Serves 4-6

Ingredients:

3 bananas
half a punnet strawberries (or other sweet berries to suit yourself), roughly equal weight to the bananas, wash and remove stalks etc
Double cream

Method

  1. peel the bananas and roughly chop. Put the pieces into a freezer bag and leave overnight or until frozen solid
  2. Remove the frozen bananas from the freezer and immediately put them into a food processor
  3. Add the strawberries and blitz. Add a good dollop of the cream and blitz again. 
  4. Check the consistency and if too firm, add a little more cream to adjust. Blitz a little more to slightly whip the mixture but stop before it starts to melt too much as it will go runny.
  5. Serve immediately
That's it! I know it sounds bonkers but it only takes moments to make, tastes absolutely fabulous and gives a great dessert. Remember that, per portion this is around half a banana, a handful of berries and a small amount of cream, so minimal carbs, some good fats and a whole host of trace elements with very little calorific value. 
It's also relatively cheap compared to premium ice-creams and is great for kids. 

Why not keep some frozen bananas on stand-by to create a dessert in moments when the need arises.
